Roasted Sweet Potatoes, Crispy Chickpeas and Lemon Sauce
Article
When I think of the LaBouffe section, and more specifically the Recipe tag, I am not looking for yet another demonstration. I am looking for a dish that feels like me when I am tired, when I need to unwind, or simply when I feel like eating something that feels right. I like things that are straightforward, clear, without unnecessary embellishment, and that is exactly what I find in this plate of roasted sweet potatoes, crispy chickpeas and lemon sauce. There is a kind of calm in this recipe that speaks to me deeply: few elements, but each has its place, its texture, its role. As a graphic designer, I am sensitive to that kind of balance—almost visual before it is even about taste. I start with two sweet potatoes, which I cut into wedges and lightly coat with olive oil, salt, paprika and a little pepper, then let them take on a beautiful colour in the oven. Alongside them, I carefully dry a jar of chickpeas, toss them with cumin and a drizzle of oil, and add them to the tray so that they become golden, almost lively to the bite. Meanwhile, I make a very simple sauce with Greek yoghurt, lemon juice and a little zest, a small grated clove of garlic, and fresh herbs. It is the kind of sauce that wakes everything up without stealing the show.
