Eating Organic Without Fooling Myself

I often return to organic food because I need clarity. In my kitchen, I have never been looking to strike a pose, much less to display a moral stance at the market. Rather, I look for products that speak plainly to me, that taste good, that can be cooked without making me feel as though I am cheating my own rhythm. When I come home from teaching, with my head still full of sentences, papers, and voices heard throughout the day, I need meals that bring me back to something simple and alive. Organic food often helps me take that step aside—not because it is an absolute, but because it gives me a clearer framework for choosing. I rely a great deal on intuition, with the slightly bohemian sensibility that I fully embrace, but I do not like to lose sight of the concrete reality of things. So I favour seasonal vegetables, a few dependable fruits, bread with substance, eggs, yogurts, grains—the staples that carry me through the week without ending up neglected at the back of the fridge. I quickly notice the difference in textures, aromas, and the way food holds up when cooked. These are small details, but they are precisely the details that change my enjoyment of eating. I cook better when I feel that the ingredients have a clearer identity—less uniform, closer to what I expect from a meal that truly nourishes. I do not turn organic food into a sacred rule. I choose it where it makes sense for me, where it improves my daily life without locking me into an exhausting standard. I like that flexibility, because it respects my temperament as a teacher, my taste for nuance, and my need for balance. I can very well enjoy a simple, comforting, almost modest plate of food and find great pleasure in it if it feels right. Perhaps that is, ultimately, my relationship with organic food in LaBouffe: a way of inhabiting my kitchen with more attention, tenderness, and consistency, without losing the joy of eating.
