In southern Africa, Zambia stretches across plateaus, river valleys and extensive lake environments. The Zambezi and Victoria Falls are familiar landscape markers, but cultural life also develops far from those well-known places. Bemba, Lozi, Tonga, Chewa and other communities maintain their own languages and ceremonial calendars. Kuomboka, associated with the Lozi and seasonal movement in response to rising water, gives the ceremonial boat a meaning of memory and social continuity. Other ceremonies, such as Kulamba, express different community relationships. Basketry transforms fibres into useful forms whose techniques reveal precise knowledge of materials. Cooking often centres on nshima, a firm flour-based preparation generally made from maize, accompanied by vegetables, beans, fish or meat. Other grains and cassava may be used according to region. Fresh or dried fish reflects the importance of rivers and lakes. Preparing accompaniments and sharing a meal lets families pass on flavours, skills and eating habits that change with harvests and communities, connecting daily food to a varied cultural landscape.
