From the Mediterranean coast to the Euphrates plains, Syria contains varied landscapes and urban and rural traditions. Damascus and Aleppo preserve the memory of markets, places of worship and specialised crafts. Songs, storytelling and household practices give this heritage a living dimension, carried by communities with different languages and religious backgrounds. In Al-Mrah, cultivation of the Damask rose links harvesting, sorting and distillation. The flower represents shared agricultural knowledge as much as fragrance. Aleppo soap recalls a different craft history involving oils and workshop skills. Cooking varies between coastal areas, cities and the countryside. Grain and meat kibbeh, vegetable dishes, bread and selections of mezze form parts of several repertoires, many shared with neighbouring cultures. Rose petals also flavour syrups, preserves and pastries. Preparing substantial family meals passes on techniques and recipes. Displaced households and diaspora communities contribute to preserving these culinary memories too, adapting familiar dishes to available ingredients and changing circumstances while maintaining connections with particular places and family histories.
