Between the Red Sea, the Nile valley and Sahelian landscapes, Sudan contains a wide range of environments and cultural traditions. The pyramids of Meroë recall the kingdoms of Kush and an ancient African history distinct from that of neighbouring Egypt. Nubian traditions, western communities and eastern regional cultures each contribute languages, songs and craft knowledge. Poetry and oral narratives connect local memory with contemporary expression. Woven objects, pottery and clothing also reveal skills adapted to available materials and social uses. Hospitality often takes a familiar form through the serving of coffee or tea. At meals, kisra, a thin fermented bread generally made from sorghum, accompanies sauces known as mullah. Prepared broad beans called foul, porridges and other breads form parts of repertoires that vary across the country. Managing fermentation and cooking temperatures is knowledge passed through households. Collective meals, particularly for religious celebrations, connect agricultural ingredients with obligations of kinship and neighbourliness, showing how everyday food preparation contributes to Sudan’s varied living heritage.
