New Caledonia · national emblem

New Caledonia brings together Grande Terre, the Loyalty Islands and other Pacific islands, with mountains, lagoons and dry or forested landscapes. Kanak cultures have numerous languages and distinct traditions according to customary areas. The great house can represent social relationships and provide a meeting space; its carved elements need to be understood within their context. Yam is both a food and a cultural landmark, associated with a cultivation calendar, exchanges and certain ceremonies. Residents of European, Polynesian, Asian and other origins also contribute to contemporary life throughout the territory. Bougna brings together tubers, coconut and meat or fish, traditionally wrapped in leaves before cooking. Versions and serving occasions differ. Lagoon fish, fruit and recipes resulting from migration complete tables. Welcoming guests and circulating food sometimes carry particular customary meanings. This diversity encourages connections between cooking, heritage and the communities transmitting them, rather than assuming one island image can describe every cultural experience within New Caledonia.
