Jordan stretches from Levantine uplands to the desert landscapes of Wadi Rum, with access to the Red Sea at Aqaba. Amman brings together urban histories different from those of agricultural villages and Bedouin communities. Coffee offered to guests, orally transmitted stories and women's textile work illustrate living forms of hospitality. At Petra, façades carved into sandstone recall Nabataean trading networks rather than merely presenting the image of a mysterious city. The desert also preserves memories of pastoral movement and relationships between families. Mansaf usually combines rice, lamb and jameed, a fermented and dried dairy product that gives the sauce its distinctive flavour. Offered on major occasions, this dish expresses welcome and solidarity within the group. Mezze, bread, stuffed vegetables and pastries accompany tables shaped by regional preferences and family histories. Meals therefore provide a practical introduction to Jordanian social relationships, while the country's archaeological remains reveal how goods, techniques and ideas travelled across this part of the Middle East.
