The Gambia is organised around the river of the same name, between an Atlantic estuary, farmland and riverside villages. Mandinka, Wolof, Fula, Jola and other communities contribute varied languages and practices. Griot traditions connect storytelling, genealogy and music with particular social responsibilities. The kora, a stringed instrument with a calabash resonator, makes this heritage audible across part of West Africa. Drum rhythms and festive dances are nevertheless not identical throughout the country. Textiles and everyday objects preserve other forms of skilled work and local knowledge. Benachin brings rice and its additional ingredients together in one preparation, with fish, meat and vegetable versions. Domoda uses a groundnut sauce accompanied by foods that vary between households. River products and agricultural harvests complete these meals, linking cooking with the resources of particular places. Eating together and offering a portion to visitors connects food with relatives, neighbours and welcome. Household recipes and the stories of the people preparing them make each shared table more specific than a general account of national cuisine.
