In eastern Africa, Ethiopia brings together highlands, Rift valleys and lowlands with a wide range of languages and traditions. Lalibela’s rock-hewn churches preserve a remarkable Christian history, while Harar and Oromo, Sidama and other regional cultures provide different reference points. Songs, festivals and textile arts therefore do not follow the same practices everywhere. The coffee ceremony is a familiar symbol of sociability: roasting, preparation and serving give conversation a recognisable sequence of gestures and time. It also connects harvests in coffee-growing areas with household customs. Injera, a large fermented flatbread made particularly with teff, accompanies several sauces known as wat. Lentils, vegetables and meat enter repertoires that differ according to family, region and religious calendar. Fasting meals may favour plant-based preparations. Dishes arranged on the same bread encourage diners to eat together and share accompaniments. This cuisine of textures, spices and fermentation passes on precise expertise alongside memories of family meals, demonstrating how practical knowledge and social relationships meet at the table.
