On the island of Borneo, Brunei brings together tropical forests, waterways and settlements facing the coast. Kampong Ayer, a group of neighbourhoods built above the water, recalls a history in which movement, work and neighbourly relations developed around the river. Malay culture and Islam have important roles alongside the heritages of several Indigenous communities. Textile arts, decorative metalwork and family ceremonies transmit knowledge that differs between groups. Mosques provide architectural landmarks, while stilt houses demonstrate practical responses to a watery environment. Ambuyat is a sago starch preparation gathered with special chopsticks and dipped into sauce. The dish also belongs to neighbouring Bornean traditions, and eating it together gives particular importance to the selection of accompaniments. Fish, vegetables and spicy sauces form a varied spread around it. During festive visits, families offer several preparations and allow conversation to continue across the meal. These occasions connect close relatives with guests, combining familiar techniques with the individual tastes and habits of the people preparing the food.
