In the eastern Himalayas, Bhutan contains cultivated valleys, forests and high mountain regions with different ways of life. Local languages and practices complement a culture strongly influenced by Buddhism. Dzongs, large fortified complexes combining religious and administrative functions, give architectural form to this history. At tshechu festivals, masked dances transmit stories and teachings, carrying meanings that extend beyond their striking costumes. Textiles woven with patterns associated with particular regions and makers provide another language of cultural transmission. The dragon on the flag refers to the country's identity, often expressed through the name Land of the Thunder Dragon. Cooking gives chilli a central role as an ingredient rather than simply a seasoning. Ema datshi combines chillies with cheese and has many household variations. Red rice, vegetables and preparations using other grains accompany meals according to local altitude and resources. Visits and festivals bring several dishes together, with attentive serving expressing connections between relatives, neighbours and guests. Regional preferences remain visible within these shared occasions.
