Between tropical forest and the Caribbean Sea, Belize connects Maya sites, agricultural villages and coastal communities. Maya, Garifuna, Creole and Mestizo heritages do not merge into one uniform tradition. Languages, festival calendars and cooking practices provide ways to understand their differences. Garifuna music gives an important role to singing, dancing and drums, transmitting a community memory shared with other countries in the region. Archaeological remains document an ancient Maya history, while present-day Maya communities maintain cultural practices of their own. Hudut combines a coconut milk fish soup with a preparation of pounded plantains. Cassava is another significant ingredient in Garifuna cooking, including breads and puddings made with locally transmitted techniques. In other households, rice and beans or tortillas accompany meals with different seasonings. Markets and family gatherings bring these cuisines into contact without removing their particular backgrounds. Offering a serving and explaining how it was prepared makes a meal an opportunity to share the country's cultural variety through everyday conversation.
