Flag: Anguilla
Anguilla · national emblem

Anguilla is a low-lying island in the Lesser Antilles, surrounded by reefs and shaped by a longstanding relationship with the sea. Boatbuilding and boat racing make this maritime culture visible, with knowledge moving between crews, families and villages. Summer celebrations bring these events together with parades, calypso and contemporary music, giving island gatherings their own rhythm. At Fountain Cavern, ceremonial remains and rock carvings recall Indigenous societies present long before colonisation. They represent an archaeological inheritance that deserves to be distinguished from the traditions of today's population. Memories of fishing and navigation also provide context for the three dolphins on the island's emblem. Grilled fish and seafood feature prominently in cooking, often accompanied by rice or peas. Johnny cakes, small breads prepared according to different household recipes, are served with savoury dishes. Beach meals and neighbourhood gatherings connect these flavours with everyday island relationships. The table reflects both local fishing practices and the wider exchanges that have contributed to Caribbean food culture.
